The 4th of July is one of those holidays that you may find it difficult to find vegan options on the menu. There is nothing more fitting for a 4th of July feast that burgers. This sweet potato burger will have your guests coming back for more. This burger is spicy due to the jerk seasoning yet maintains that hint of sweet from the potato. This was my first time making this burger but I must admit I felt satisfied. The flavors really popped and awakened my taste buds. - 1 meduim small sweet potatoes cooked
- 1 can white kidney beans you can cook your own beans yeild 2 cups
- 3 tsp Tahini sauce
- 1 cup chopped onions
- 1 tsp jerk seasoning
- 1/2 cup nutritional yeast
- 2 tsp coconut oil
- 1 cup finely chopped kale
- 1 tsp granulated garlic
- 1 tsp apple cider vinegar
- 1 tbsp salt
- 1 tbsp pepper
- 1/2 cup panko bread crumbs
- Bake your sweet potato in oven until tender. You can also microwave if you don't have the time. Add sweet potato and beans in bowl and mash together. Add all other ingredients except coconut oil and panko bread crumbs. Shape mixture into burger patties and coat with panko bread crumbs. Lightly pan fry until golden brown (about 2-3 minutes on each side). Once crispy lay on baking sheet and bake in oven at 375 degree for 15-20 minutes or until golden brown and crispy. Toast bun and add toppings. Enjoy!
You can freeze left over burgers and reheat in oven.
