
Oh She Glows Cookbook by Angela Liddon is one of my favorite cookbooks. I decided to share my take on her green detox soup. I made a few minor adjustments but I stuck to the recipe for the most part. This is a savory soup with very bold flavors. I decided to serve this soup over brown rice to make it more hearty. Ingredients
- 2 tbsp coconut oil she suggests 11/2 but I needed a bit more
- 1 medium diced onion
- 1 tsp diced garlic
- 3 cups mushrooms
- 1 cups carrots
- 2 cups broccoli
- 1 tsp seasoning salt subsituted that for sea salt/did not add pepper
- 2 tsp minced ginger I used spice world squeeze ginger. The fresh ginger made the soup too peppery last time.
- 1/2 tsp tumeric
- 2 tsp ground cumin
- 1/8 tsp ground cinnamon
- 5 cups vegatablebroth
- 3 cups kale I added a little extra kale recipe called for 2 cups

Instructions
- 1. In a large saucepan sauté coconut oil, onion, garlic until translucent. 2. Add mushrooms, carrots, broccoli and stir for about five minutes. Then add all your seasonings. (ginger, cumin, turmeric, cinnamon, seasoning salt) The recipe also called for nori seaweed strips but I didn't use that. 3. Add vegetable broth and let simmer for about 10-20 minutes. 4. Lastly right about when vegetables are cooked add your chopped Kale for a few minutes. Serve over a bed of brown rice. Enjoy!
