1. In a large saucepan sauté coconut oil, onion, garlic until translucent.
2. Add mushrooms, carrots, broccoli and stir for about five minutes. Then add all your seasonings. (ginger, cumin, turmeric, cinnamon, seasoning salt) The recipe also called for nori seaweed strips but I didn't use that.
3. Add vegetable broth and let simmer for about 10-20 minutes.
4. Lastly right about when vegetables are cooked add your chopped Kale for a few minutes.
Serve over a bed of brown rice. Enjoy!
