Lentils are my most favorite thing to eat! They are hearty, versatile and the life of the party in any dish. This savory Thai Lentil Stew is all that I just mentioned. The blend of curry, the sweetness of the potatoes, the creaminess of the coconut and that kick of chili flakes creates a melody in the mouth that kept me going back for more. This is a dish that can last for a couple of days and gets better with age as the seasonings soak in.
- 1.5-2 Cups Brown lentils
- 4 Cups vegetable broth
- 1 diced onion
- 2 cloves of garlic chopped finely
- 4 tablespoons green curry
- 1 tablespoons chili flakes
- 2 Cups fresh spinach, swiss chard or kale.
- 2 small sweet potatoes diced medium size
- 1/2 cup Coconut cream
- •Add lentils, broth, onion, garlic, sweet potatoes and curry paste to crock pot.
- •Turn crock pot on high for 31/2 hours or on low for 6-8 hrs.
- •Once lentils are cooked add coconut cream, chili flakes and spinach.
- •Let cook a little longer until spinach is wilted but not overcooked.
- •Garnish with fresh lime if desired. •Enjoy!!!
I decided to cook this recipe in the crock pot because it allowed all of the wonderful flavors to unite. (Plus it is so much simpler!)
