Lentils are my most favorite thing to eat! They are hearty, versatile and the life of the party in any dish. This savory Thai Lentil Stew is all that I just mentioned. The blend of curry, the sweetness of the potatoes, the creaminess of the coconut and that kick of chili flakes creates a melody in the mouth that kept me going back for more. This is a dish that can last for a couple of days and gets better with age as the seasonings soak in.
•Add lentils, broth, onion, garlic, sweet potatoes and curry paste to crock pot.
•Turn crock pot on high for 31/2 hours or on low for 6-8 hrs.
•Once lentils are cooked add coconut cream, chili flakes and spinach.
•Let cook a little longer until spinach is wilted but not overcooked.
•Garnish with fresh lime if desired.
I decided to cook this recipe in the crock pot because it allowed all of the wonderful flavors to unite. (Plus it is so much simpler!)
